Update check script

As a devsecops engineer, I'd like more immediate feedback from the auditree check runs so that I can be more proactive to findings.

### Acceptance criteria
- [x] `check` output is all written to actions stdout
- [x] Assessment Results are written as evidence into the evidence repo
